For us at AMOTRIO Chocolate, that dream was bold and ambitious: to build our very own chocolate factory. What started as an idea, a spark of inspiration, soon became an adventure filled with challenges, triumphs, and the sweet scent of chocolate wafting through the air. This is our story.

The Perfect Location: A Blank Canvas
Finding the right location wasn’t just about picking an address; it was about finding a home for our passion. We scoured countless spaces, from industrial zones to hidden gems tucked away from the bustle of city life.
Each visit was a whirlwind of excitement and disappointment—too small, too expensive, not enough ventilation, wrong zoning.
And then, just when we thought the search would never end, we found it in Redlands, California.
A space brimming with potential, waiting to be transformed into the heart of our chocolate empire.
Designing the Future: Construction Meets Creativity
With the location locked in, the next challenge was turning this raw space into a functional, efficient, and aesthetically inspiring chocolate factory.
We partnered with some construction designers, some of whom had little experience in building a chocolate factory.
“You need what kind of ventilation?”
“A humidity-controlled room for tempering?”
Their initial confusion slowly gave way to fascination as they became immersed in the world of chocolate-making. We sketched blueprints, argued over layout designs, and envisioned a place where craftsmanship and innovation would intertwine.

Laying the Foundation: Construction Begins
Then came the real test—construction.
The walls went up, the floors were reinforced, and the space that was once an empty shell began to take shape. The rhythmic pounding of hammers and the whirl of drills became the soundtrack of our days.
Every delay, every unexpected hurdle tested our patience: permits stuck in bureaucracy, sudden supply shortages, the discovery of an old pipe that no one had accounted for.
But through it all, we pushed forward, fueled by an unwavering belief that soon, chocolate would flow through these walls.
The Machines of Magic: Equipment Arrives
No chocolate factory is complete without its lifeblood—precision equipment that transforms ingredients into edible masterpieces.
We sourced the best: depositing machines, tempering machines, cooling tunnels, and all the other equipment that can fulfill everything—each piece an essential cog in our vision. The moment they arrived felt like Christmas morning.
Uncrating each machine, adjusting their settings, and watching them whir to life was both exhilarating and nerve-wracking.
Would they work perfectly? Would they create the textures and flavors we envisioned?
The tension was thick, but as the first batches of chocolate ran through the machines, we knew—we were on the right path.
The Soul of Chocolate: Expertise from the Motherland
Yet, machines alone do not create masterpieces—people do.
Our next mission was to bring in the experts from our headquarters, the chocolatiers whose hands held decades of experience.
They will arrive like sages of cocoa, their wisdom steeped in tradition, their techniques honed over years of perfecting the craft.
The next step of the factory floor is to become a living classroom, as knowledge was transferred through whispers over tempering tanks and demonstrations over marble slabs.
Watching the team evolve, from tentative movements to confident strokes, was proof that we weren’t just building a factory—we are going to craft a legacy.
A New Chapter Begins
Now, as we stand within these walls, surrounded by the hum of machines and the intoxicating aroma of chocolate, we realize this is more than just a factory. It’s the culmination of relentless passion, tireless effort, and a shared dream.
From the first brick laid to the first chocolate bar wrapped, this journey has been nothing short of magical. And as we take our first steps into production, we know this is just the beginning.
